Bloody Mary Elk Burger with Bloody Mary Black Umami Garlic Ailoi With Zucchini Fries Serves 4-6 people Prep time: 20 minutes Cook Time: 25-30 minutes Total: 40 minutes

 

 

 

 

Bloody Mary Elk Patties 1 lbs. ground elk meat, ( I used River Birch Ranch Elk , Merrill, WI ) 3 tablespoons minced dried onion flake Salt & pepper to taste 1/2 teaspoon cayenne 4 tablespoon parsley fresh or 2 of Dried 3-5 tabasco dashes 1 tablespoon Worcestershire ¼ cup bloody mary mix ( I used zig zang) ½ cup bread crumbs 5 cloves Black Umami Garlic 1 Tablespoon Tomato paste Directions: 1. Place all ingredients in large bowl and fold until fully incorporated. Patty burgers at 6-8oz depending on size. Chill for 20 minutes before cooking 2. Depending on temperature preference , 2-4 minutes each side in a cast iron pan or on the grill. Bloody Mary Black Umami Garlic Aioli 1 cup Mayo 10 cloves, Black Umami Garlic 1 tablespoon Celery seed ½ teaspoon Cayenne 4 tablespoon Fresh Parsley 1 tablespoon horseradish ¼ cup Bloody Mary mix Splash of Vodka 4 dashes of Worcestershire 10 dashes Tabasco 1 tablespoon tomato paste Zucchini Fries 4 medium zucchini ¾ cup all-purpose flour 1 teaspoon salt, plus more to finish ¾ teaspoon freshly ground black pepper 2 eggs 2½ cups panko bread crumbs ⅓ cup grated Parmesan cheese ½ teaspoon garlic powder ½ teaspoon cayenne pepper Directions 1. Preheat the oven to 375°F. Grease a baking sheet with nonstick spray. 2. Trim the ends from the zucchini, then cut in half widthwise. Cut in half again, then cut each piece into 4 fat wedges (you’ll get about 16 wedges per zucchini). 3. In a large, shallow bowl, mix the flour with the salt and pepper to combine. In a second large, shallow bowl, whisk the eggs. In a third large, shallow bowl, mix the bread crumbs with the Parmesan, garlic powder and cayenne pepper to combine. 4. Working in batches, dip each piece of zucchini first into the flour mixture, then into the egg, then into the bread crumbs. Transfer the breaded zucchini to the prepared baking sheet. 5. Bake until the breading is golden brown and crisp, 25 to 30 minutes. Season with additional salt to taste; serve immediately.
