Thai Peanut Turkey Lettuce Wraps

Serves 4 people

Filling Ingredients

  • ½ red onion diced

  • ½ cup carrot diced

  • ½ cup diced red bell pepper

  • 2 tablespoon olive oil

  • 1 tablespoon Thai red curry paste

  • 1 pound extra lean ground turkey or chicken

  • Bibb, butter or romaine lettuce

  • Peanuts to garnish

  • Green onions (for topping)

  • Sesame seed (for topping)

  • Spicy Peppers (Optional if you desire a kick, I used Fresno chilis)

Sauce ingredients

  • ¼ cup peanut butter

  • 3 tablespoon soy sauce

  • 2 tablespoons rice vinegar

  • 2 tablespoons water

  • 1 teaspoon sesame oil

  • 1 tablespoon lime juice


  1. Mix all the peanut sauce ingredients using a mixing bowl, in a mason jar or blender and set aside.

  2. Heat oil in a large pan and add onions, peppers, carrots and Thai red curry paste. Stir until red curry paste is heated through and mixed in evenly with the vegetables (4-5 minutes on medium-high heat)

  3. Add the ground turkey and cook, breaking it up with a spatula, for 5-7 minutes, until no pink remains, and the turkey is cooked through.

  4. Pour the peanut sauce evenly over the ground turkey mixture and stir to combine.

  5. Remove from heat. Add white part of sliced scallions in and toss.

  6. To serve: Spoon ¼ cup of the ground turkey mixture into your lettuce leaf. Sprinkle with green onion, chilis and peanuts and enjoy.
